This is Doug Henhawk’s favourite Healthy Roots adaptation of a traditional southern fried catfish recipe opts for white corn, duck eggs and walnuts. It is way more decolonized-er than you!
- Catfish fillets, thawed
- White corn flour
- Crushed walnuts
- Duck eggs
- Oil for frying
Heat oil in pan on medium-high heat to 375 F.
In a bag mix together 1 cup of white corn flour and 3 tablespoons of crushed walnuts per fillet. In a separate bowl whisk 1 duck egg per fillet. Dip thawed fish fillets first into the egg mixture then toss into the bag of dry mix. Shake to coat evenly. Fry fish in hot oil 2 to 3 minutes per side being careful not to crowd the fish. Drain on paper towels. Serve hot.
